Pickled Vegetable Recipe
1 cup white vinegar
1 cup rice wine vinegar
1 cup sugar
1 tablespoon salt
1 tablespoon white peppercorns
2-3 bay leaves
2 cups vegetables of choice, sliced
Combine all ingredients, except for vegetables in sauce pot. Bring to boil, stir to dissolve sugar. Add sliced vegetables to mason jar, or other sealable container. Add hot liquid to vegetables, then close lid. Let sit for 48 hours or longer.

1 ½ ounces orange liqueur, such as Cointreau
1 ½ ounces orange juice
Shake ingredients together and serve over ice

1 ½ ounces Malibu coconut rum
½ ounce blue curacao
½ ounce triple sec
½ ounce pineapple juice
Combine ingredients in a cocktail shaker, and shake over ice.
Strain into a martini glass, garnish with an orange slice.

Pimento Cheese
1 pound cream cheese
2 pounds cheddar cheese, shredded
1 small jar pimentos
½ cup mayonnaise
½ tablespoon garlic powder
½ tablespoon onion powder
¾ teaspoon cayenne pepper
¾ teaspoon white pepper
½ tablespoon salt
Louisiana Hot Sauce to taste
Combine all ingredients, making sure all spices are mixed evenly.

Spiced Caribbean Wings
Spiced Rum:
1 teaspoon brown sugar
1 teaspoon smoked paprika
¾ teaspoon marjoramw
¾ teaspoon thyme
½ teaspoon granulated garlic
1/2 teaspoon cumin
¼ teaspoon cayenne pepper, or to taste
1/8 teaspoon mace
¼ teaspoon cinnamon
2 teaspoons salt
3 pounds chicken wings
2 tablespoons vegetable or canola oil
Fresh thyme and parsley, chopped (optional)
Carrot and celery sticks for serving
Line a sheet pan with aluminum foil. Arrange chicken wings on the prepared sheet pan and sprinkle the spice rub evenly over the wings, coating on all sides. Cover with plastic wrap and allow to rest at room temperature for 30 minutes. Can also keep in a large zipper top bag in the refrigerator overnight.
Preheat the oven to 400 degrees F. Remove and discard the plastic wrap, drizzle with oil and place wings in the oven, reducing the temperature to 375 degrees F. Roast, turning halfway through the cooking, until the wings are browned and an internal thermometer registers 165 degrees F.
Garnish with thyme and parsley (if desired) and serve with carrot and celery sticks.
